Ooops, I did it again.

Told you, I love this salad. And I had nearly all of the ingredients on hand and was able to use some creative substitutions to avoid venturing out in the stormy weather—dried herbs instead of fresh, fuji apple in lieu of a granny smith, and black olive juice-from a can-instead of caper juice. 3 key ingredients that are nearly always in my pantry or refrigerator: kale (Whole Foods and Fairway sell bags of chopped kale ), pecans (or walnuts) and chopped pancetta (I love buying it directly from the butcher but I always like to have a package of pre-chopped in my fridge just in case).
